Ingredients
  

  • For the Breadstick Dough
  • 1 ½ cups warm water
  • 1 tablespoon instant yeast
  • 2 tablespoons sugar
  • 3 ½ cups 497 g flour (plus more if needed)
  • ½ teaspoon salt
  • For the Filling and Glaze
  • 2 tablespoons salted butter melted
  • ¼ cup 53 g granulated sugar
  • 1 ½ teaspoons ground cinnamon
  • ½ cup 57 g powdered sugar
  • 1 tablespoon milk more or less, as needed
  • ¼ teaspoon vanilla extract

Method
 

  1. Make the Dough: In a large bowl, combine the warm water, instant yeast, and sugar. Let sit for 5 minutes until foamy. Add flour and salt, mixing until a soft dough forms. Knead for 5–7 minutes until smooth and elastic.
  2. Let It Rise: Place the dough in a lightly oiled bowl, cover, and let rise in a warm spot for 45–60 minutes, or until doubled in size.
  3. Shape the Breadsticks: Preheat oven to 375°F (190°C). Punch down the dough and roll it into a rectangle, about ½ inch thick. Cut into strips (about 12 pieces). Place them on a greased or parchment-lined baking sheet.
  4. Brush with Butter: Melt the salted butter and brush it over the breadsticks. In a small bowl, mix the granulated sugar and cinnamon, then sprinkle evenly over the breadsticks.
  5. Bake: Bake for 12–15 minutes, until golden brown and cooked through.
  6. Make the Glaze: While the breadsticks bake, whisk together powdered sugar, milk, and vanilla until smooth. Adjust milk for desired consistency.
  7. Finish and Serve: Drizzle the glaze over warm breadsticks. Serve immediately for the best texture.

Notes

  • If the dough feels sticky, add a little more flour, one tablespoon at a time, during kneading.
  • For extra indulgence, double the cinnamon-sugar topping.
  • These are best enjoyed warm, but you can reheat them in the oven for a fresh-from-the-oven feel.
