Ingredients
  

  • Pizza Sauce Tip 1: can substitute store-bought
  • 28- ounce can whole tomatoes drained
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Mini Halloween Pizzas
  • 3 10-inch flour tortillas (Tip 2: can substitute mini pita rounds)
  • 2 teaspoons olive oil
  • 4 slices mozzarella cheese
  • 1 slice cheddar cheese
  • 4 large black olives
  • 1/4 cup pizza sauce from above
  • 2 tablespoons shredded mozzarella cheese

Method
 

  1. Make the sauce: Heat olive oil in a saucepan over medium heat. Add garlic and sauté 1–2 minutes until fragrant. Stir in tomatoes, vinegar, oregano, salt, and pepper. Simmer 10 minutes, then mash or blend until smooth. Cool slightly before using.
  2. Prepare tortilla bases: Preheat oven to 400°F (200°C). Brush tortillas lightly with olive oil on both sides. Cut out 2–3 circles from each tortilla using a cookie cutter or glass (about 4 inches wide). Place on a baking sheet.
  3. Decorate your pizzas: Spread a thin layer of sauce on each tortilla circle. Add shredded mozzarella. Cut ghost shapes from mozzarella slices and pumpkin shapes from cheddar. Place on pizzas. Slice olives in half and cut slivers for “spider legs.” Arrange into spider shapes on pizzas.
  4. Bake: Bake for 8–12 minutes, or until tortillas are crisp and cheese is melted.
  5. Serve: Let cool slightly, then serve warm and spooky!

Notes

  • Active prep: 15 minutes (sauce, cutting, decorating).
  • Passive baking: 12 minutes.
  • Tortilla crusts bake quickly, so keep an eye to prevent burning.
  • Use a broiler for 1–2 minutes at the end for bubbly, golden cheese.
