This Instant Pot Chicken and Rice is a creamy, cheesy, one-pot dinner made with juicy chicken, fluffy rice, tender broccoli, and Parmesan. A perfect weeknight comfort meal that’s ready in 30 minutes.

Ingredients
  

  • 3 tbsp butter
  • 1 medium yellow onion diced
  • 1 ½ lbs boneless skinless chicken breasts cut into bite-sized pieces
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • 3 cups chicken broth
  • 1 ½ cups long-grain white rice
  • 3 cups fresh broccoli florets
  • 1 cup freshly grated Parmesan cheese

Method
 

  1. Sauté Aromatics and Chicken
  2. Set the Instant Pot to Sauté mode. Melt butter, then add diced onion. Cook until softened, about 3 minutes.
  3. Add chicken pieces and season with garlic powder, salt, onion powder, oregano, and pepper. Cook until lightly browned on the outside (they don’t need to be cooked through yet).
  4. Add Rice and Broth
  5. Stir in the rice, coating it with the seasonings.
  6. Pour in chicken broth, scraping the bottom of the pot to deglaze and prevent burning.
  7. Pressure Cook
  8. Cancel Sauté mode. Lock the lid and set the Instant Pot to Manual High Pressure for 8 minutes.
  9. When the cycle is complete, allow a natural release for 10 minutes, then quick-release any remaining pressure.
  10. Add Broccoli and Cheese
  11. Open the lid and stir in broccoli florets. The residual heat will steam them to tender-crisp perfection.
  12. Stir in Parmesan cheese until creamy and melted.
  13. Serve and Enjoy
  14. Scoop into bowls and serve warm, garnished with extra Parmesan if desired.

Notes

  • Active Time: ~10 minutes
  • Passive Time: ~15 minutes pressure cooking + release
  • Always deglaze the pot after sautéing to prevent the “burn” notice.
  • For softer broccoli, steam it separately and stir in just before serving.
  • If you like it extra creamy, stir in ¼ cup heavy cream with the cheese.
