Brown the sausage: Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage, breaking it apart with a spoon, and cook until browned.
Add aromatics: Stir in garlic, Italian seasoning, paprika, red pepper flakes, and tomato paste. Cook for 1–2 minutes until fragrant.
Simmer with sweet potato: Add cubed sweet potato and 6 cups water (or broth). Bring to a boil, reduce heat, and simmer 15–20 minutes, until potatoes are tender.
Cook the tortellini: Add tortellini and simmer for 5–7 minutes, until pasta is tender.
Finish with greens and cream: Stir in spinach, heavy cream, and fresh thyme. Cook just until spinach wilts.
Serve: Taste and adjust seasoning. Ladle into bowls and serve with bread or a sprinkle of parmesan.
