Ingredients
  

  • 12 oz sausage such as spicy Italian sausage
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika regular or smoked
  • 1 large sweet potato or 2 small, peeled and cubed
  • 5 cloves garlic minced
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 6 cups water or low-sodium chicken broth for richer flavor
  • 8 oz tortellini refrigerated three-cheese, such as Buitoni
  • 4 oz fresh spinach
  • ½ cup heavy cream
  • 4 tablespoons fresh thyme leaves

Method
 

  1. Brown the sausage: Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage, breaking it apart with a spoon, and cook until browned.
  2. Add aromatics: Stir in garlic, Italian seasoning, paprika, red pepper flakes, and tomato paste. Cook for 1–2 minutes until fragrant.
  3. Simmer with sweet potato: Add cubed sweet potato and 6 cups water (or broth). Bring to a boil, reduce heat, and simmer 15–20 minutes, until potatoes are tender.
  4. Cook the tortellini: Add tortellini and simmer for 5–7 minutes, until pasta is tender.
  5. Finish with greens and cream: Stir in spinach, heavy cream, and fresh thyme. Cook just until spinach wilts.
  6. Serve: Taste and adjust seasoning. Ladle into bowls and serve with bread or a sprinkle of parmesan.

Notes

  • Broth vs. water: Chicken broth adds more flavor, but water works if you want the sausage and herbs to shine.
  • Sweet potato swap: Yukon Gold potatoes also work if you prefer a more traditional flavor.
  • Make it richer: Stir in extra parmesan with the cream for a thicker, cheesier broth.
