Ingredients

  • 2 lbs chicken breasts
  • 1 packet ranch dressing mix
  • 1 8 oz block cream cheese
  • ½ –¾ cup cooked crumbled bacon depending on how much you love bacon
  • 1 cup shredded cheddar cheese
  • 4 green onions sliced
  • Buns for serving

Method

  1. Layer chicken and seasonings: Place chicken breasts in the bottom of the crockpot. Sprinkle ranch dressing mix evenly over the chicken.
  2. Add cream cheese: Place the block of cream cheese on top of the chicken.
  3. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through and tender.
  4. Shred and mix: Shred chicken directly in the crockpot using two forks. Stir well to combine with melted cream cheese and ranch seasoning.
  5. Add cheddar and bacon: Stir in shredded cheddar cheese and crumbled bacon. Cover for 5–10 minutes until cheese is fully melted.
  6. Finish with green onions: Sprinkle sliced green onions on top for freshness.
  7. Serve: Pile onto sandwich buns, wraps, or serve over rice, pasta, or roasted veggies.

Notes

  • Active time: 10 minutes (prep and shredding).
  • Passive time: 6 hours (slow cooker).
  • Chicken thighs can be substituted for breasts for extra tenderness.
  • To make the dish creamier, stir in a splash of heavy cream just before serving.
