Ingredients
  

  • 40 square pretzel snaps window-shaped
  • 40 caramel squares such as Werther’s or Kraft
  • 1 large Granny Smith apple cut into 1-inch cubes
  • ¼ cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil
  • ¼ cup crushed peanuts
  • 1 tablespoon lemon juice
  • 1 cup cold water

Method
 

  1. Prepare the Apple: In a small bowl, mix the cold water and lemon juice. Add the apple cubes to prevent browning. Let sit for 5 minutes, then drain and pat dry.
  2. Assemble the Base: Line a baking sheet with parchment paper. Arrange 20 pretzel snaps in a single layer.
  3. Soften the Caramel: Place one caramel square on each pretzel. Microwave in 10-second bursts until slightly softened but not melted.
  4. Add the Apple: Gently press one apple cube into each softened caramel, securing it slightly.
  5. Top and Finish: Place another pretzel on top of each apple cube, pressing gently to create a little sandwich.
  6. Melt the Chocolate: Combine chocolate chips and coconut oil in a microwave-safe bowl. Heat in 20-second intervals, stirring until smooth.
  7. Drizzle & Garnish: Drizzle the melted chocolate over the pretzel bites and sprinkle with crushed peanuts.
  8. Set & Serve: Chill in the refrigerator for 10–15 minutes to set the chocolate, then serve immediately or store as directed below.

Notes

  • These are best enjoyed fresh, but you can make them a few hours ahead.
  • The lemon water prevents apple browning and adds a light tart balance to the sweet caramel and chocolate.
  • Active time is about 20 minutes; passive time for chilling is roughly 10 minutes.
