Ingredients
  

  • 2 ripe tomatoes
  • Kosher salt
  • 8 strips of bacon
  • 4 slices Texas toast or other thick sandwich bread
  • ¾ cup grated cheddar cheese
  • ¾ cup grated part-skim mozzarella cheese
  • ¾ cup mayonnaise
  • 5 scallions finely chopped
  • ¼ cup chopped fresh parsley
  • ½ small zucchini very thinly sliced
  • Freshly ground black pepper

Method
 

  1. Prep the Tomatoes
  2. Core and slice tomatoes thinly.
  3. Place in a colander, sprinkle with ½ teaspoon salt, and let drain at least 15 minutes.
  4. Cook the Bacon
  5. Fry bacon in a skillet over medium heat until crisp, about 10 minutes.
  6. Drain on paper towels, saving drippings.
  7. Toast the Bread
  8. Leave 1 tbsp bacon drippings in skillet.
  9. Toast bread slices on one side until golden.
  10. Place toasted-side down on a baking sheet.
  11. Mix the Cheese Topping
  12. In a bowl, combine cheddar, mozzarella, mayonnaise, scallions, and parsley.
  13. Mix until creamy.
  14. Assemble the Toasts
  15. Spread most of the cheese mixture over the untoasted side of each bread slice.
  16. Crumble bacon evenly on top.
  17. Add tomato slices and zucchini ribbons.
  18. Dot with reserved cheese mixture and season with black pepper.
  19. Bake
  20. Preheat oven to 400°F (200°C).
  21. Bake for 15–20 minutes, or until golden and bubbly.
  22. Serve
