Ingredients
  

  • 1 lb chicken breasts
  • 5 medium potatoes chopped
  • 2 tbsp olive oil
  • Salt pepper, garlic powder, and paprika (to season potatoes)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce enough to coat chicken—about ½ to ¾ cup
  • 1 cup shredded mozzarella cheese

Method
 

  1. Season the potatoes: In a large bowl, toss chopped potatoes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated. Spread them evenly in the bottom of your slow cooker.
  2. Prepare the chicken: Season chicken breasts with salt, pepper, onion powder, paprika, Italian seasoning, and minced garlic. Place the chicken on top of the potatoes.
  3. Add the sauce: Pour the garlic parmesan sauce evenly over the chicken and potatoes, making sure the chicken is fully coated.
  4. Slow cook: Cover and cook on low for 4–6 hours or high for 2–3 hours, until chicken is cooked through and potatoes are tender.
  5. Add cheese: About 10 minutes before serving, sprinkle mozzarella cheese over the top. Cover again until melted and bubbly.
  6. Serve and enjoy: Garnish with fresh parsley if desired. Serve hot with a side of bread or salad.

Notes

  • Potato tip: Red or Yukon Gold potatoes work best because they hold their shape well without turning mushy.
  • Cheese options: Mozzarella melts beautifully, but you can swap in provolone, Monterey Jack, or even parmesan for a different twist.
