Prepare the crockpot: Spray the inside lightly with non-stick spray or line with a slow cooker liner for easy cleanup.
Layer potatoes: Place the halved potatoes evenly in the bottom of the crockpot.
Season chicken: Season chicken breasts with salt, pepper, Italian seasoning, and paprika (if using). Place them on top of the potatoes.
Make garlic-Parmesan sauce: In a small bowl, whisk together the melted butter, minced garlic, heavy cream, and Parmesan cheese until smooth.
Pour sauce: Pour the garlic-Parmesan mixture evenly over the chicken and potatoes.
Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through (165°F internal temp) and potatoes are fork-tender.
Serve: Garnish with freshly chopped parsley and serve hot with a side salad or crusty bread.
