  • 4 boneless skinless chicken breasts (or thighs if you prefer)
  • 2 pounds baby potatoes halved (or red potatoes cut into chunks)
  • 1 cup heavy cream or half-and-half for a lighter version
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic minced
  • 2 tablespoons butter melted
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning or a mix of oregano, basil, and thyme
  • ½ teaspoon paprika optional, for color
  • Fresh parsley for garnish

Method
 

  1. Prepare the crockpot: Spray the inside lightly with non-stick spray or line with a slow cooker liner for easy cleanup.
  2. Layer potatoes: Place the halved potatoes evenly in the bottom of the crockpot.
  3. Season chicken: Season chicken breasts with salt, pepper, Italian seasoning, and paprika (if using). Place them on top of the potatoes.
  4. Make garlic-Parmesan sauce: In a small bowl, whisk together the melted butter, minced garlic, heavy cream, and Parmesan cheese until smooth.
  5. Pour sauce: Pour the garlic-Parmesan mixture evenly over the chicken and potatoes.
  6. Cook: Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through (165°F internal temp) and potatoes are fork-tender.
  7. Serve: Garnish with freshly chopped parsley and serve hot with a side salad or crusty bread.
